Protein Banana Bread

Moist, protein-rich banana bread that's perfect for meal prep or a quick breakfast.

Ingredients

  • 80g Flour
  • 62g Vanilla Protein Powder (2 scoops)
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • ½ tsp Baking Soda
  • 2 Large Eggs
  • 200g Mashed Banana
  • 80g Plain Greek Yogurt
  • 90g Peanut Butter
  • 1 tsp Vanilla Extract
  • 60g Chocolate Chunks (optional)

Instructions

  1. 1.Preheat oven to 350 degrees
  2. 2.Mix flour, protein powder, baking powder, salt, and baking soda in a large bowl
  3. 3.Add eggs, mashed banana, yogurt, peanut butter, vanilla and mix until smooth
  4. 4.Fold in chocolate chunks (optional)
  5. 5.Add to loaf pan (can use parchment paper to cover pan or coat with spray) and bake for 35-45 minutes
